Since 2002, Alois has poured his global expertise into shaping the culinary vision of Il San Pietro, aligning with Vito Cinque’s dream of cultivating a unique gastronomic identity for the hotel.
His approach is intuitive, emotional, and guided by an artist’s eye—whether behind the stove or the lens. A passionate photographer, Alois finds inspiration in the world around him, capturing the fleeting beauty of life through both cuisine and camera.
“When you find your passion, you have to go for it,” he says. “For me, creating new dishes and creating photographs are two sides of the same coin. It’s all about inspiration—the little signals I pick up throughout the day. I might see something at the fish market, and later, something totally unrelated triggers a connection. Suddenly, there’s a spark—and a new dish is born.”
Working alongside the Cinque family, Chef Alois describes Il San Pietro not just as a workplace, but as a second home—a place where friendship, family, and artistry come together. “Fame doesn’t matter to me,” he shares. “What matters is going to bed each night knowing I gave my best. That’s success.”
