Reimagined in 2016, this 400-square-meter culinary theater was carved from 1,806 cubic meters of solid rock in a five-month feat involving 54 tireless craftsmen working around the clock. Designed by Andrea Viacava, every detail—from the architecture to the custom-built Italian equipment—was tailored to innovation, efficiency, and sustainability.
This entirely electric kitchen operates on a computerized system that dynamically manages energy output, using just a fraction of the electricity typically required for a kitchen of its scale.
With no gas or open flames, all stoves utilize advanced induction technology, allowing surfaces to be cleaned simply with vinegar. The air is purified through a UTA (Air Treatment Unit) filtration system, and each night, the kitchen undergoes a full ozone sanitization—the same space-grade process used by NASA.
Homemade is our philosophy: from breads and pastries to ice creams and sauces, everything is crafted in-house. Organic waste is transformed into compost that nourishes our gardens, completing a full-circle ecosystem of care and flavor.
